  1. Prepare the Brie cheese: Remove the Brie cheese from the fridge. While it’s still cold, use a sharp knife and carefully cut the rind off without removing too much of the cheese. Cut the Brie into cubes, then add them to a food processor and let them come to room temperature.
  2. Blend the cheese: Blend the cheese on high speed until the consistency is smooth and airy. Stop every minute or so to scrape down the sides to ensure an even texture. You can also use an electric mixer instead of a food processor, depending on what you have in your kitchen.

Instructions

  • Take the brie cheese out of the fridge and using a sharp knife, cut the rind off, carefully not to remove too much of the cheese.

  • Cut into cubes and add to a food processor. Let it come to room temperature, then blend on high speed until smooth. Stop every minute to scrape the sides. (or use an eclectic mixer instead).

  • Once completely smooth, scrape into a serving bowl. Optional, top with chopped olives and fresh thyme leaves. Or you can make it sweet by drizzling honey or jam of choice. Serve with crackers, chips, baguette, or veggies.
