I have come to the conclusion that if I were ever stranded on a deserted island, the one food I would want to live on would be cheese. It’s the one thing I never get sick of, that I can’t get enough of. I have found that as I have gotten older, I even crave it more than I do sweets.

Give me cheese and I am happy.

So of course, when I decide to make an appetizer, my mind always goes to cheese. And brie is always a good idea.

Baked Brie en Croute

The thing about brie is that it goes so well with everything – sweet or savory. And as an appetizer, you really can’t beat melted brie, covered in crescent dough. Especially when you add berries into the mix.

I know that berries are probably not the first thing you think of when you think of baked brie. But they really did work out so perfectly. I always love having a little bit of jelly to serve with baked brie, so I thought to myself, why not just add the fruit into the center of the brie? What was born is this beautiful and very tasty holiday appetizer idea.

I tell ya – I could have eaten the whole thing myself!!

I know it sounds fancy, but are you wondering – what in the world is brie en croute?

En croute is a French term that means “in a pastry crust”. So in this case, it is just brie cheese that is in a pastry crust. Many recipes will have the brie wrapped in puff pastry (which also works here!) but I made this version with crescent rolls many years ago and fell in love with it!

How to Make Brie en Croute

This is a super easy appetizer, that only takes 4 ingredients!

  1. Take your brie and cut it in half crosswise through the center. You don’t need to remove the rind – it’s totally edible!
  2. Unroll your crescent rolls. Separate the dough into 2 sections. Press the perforations together to form 2 squares. You can also use the crescent recipe creations, which is just a large sheet of crescent dough. If you use this, just cut it in half into 2 squares.
  3. Place the bottom half of the brie on one of the dough squares.
  4. Place the berries on top of the brie.
  5. Then put the top half of the brie on top of the berries.
  6. Place the remaining square of crescent dough on top of the brie. Press the dough down evenly over the cheese, then fold the dough up over the top, pressing the edges together to seal it completely.
  7. Brush the egg over the outside of the dough.
  8. Transfer to the oven and bake until it is golden brown, about 20 minutes.
  9. Let the baked brie rest for about 15 minutes before serving.
  10. Serve with crackers and enjoy!!

Give your baked brie a wow factor by filling it with fresh berries! This Berry Stuffed Brie en Croute is an easy appetizer filled with flavor.

Ingredients

  • 1 can 8 oz refrigerated crescent dinner rolls
  • 1 round 8 oz brie cheese
  • 3/4 cup mixed fresh berries
  • 1 egg lightly beaten
  • crackers for serving

Instructions

  • Preheat the oven to 350ºF.

  • Unroll the crescent rolls and separate crosswise into 2 sections. Press the perforations to seal, forming 2 squares.

  • Cut the brie crosswise through the center. (You do not need to remove the rind!)

  • Place one square of the crescent dough on an un-greased cookie sheet. Place the bottom half of the brie in the center of the dough. Place the berries on top of the cheese, then top with the top half of the brie.

  • Place the remaining square of dough on top of the cheese. Press the dough evenly around the cheese, then fold the dough up over the top, pressing the edges to seal completely.

  • Brush the egg over the outside of the dough.

  • Bake for 20-24 minutes, or until golden brown. Allow to rest for 15 minutes. Serve warm with crackers.

    2 questions: Think frozen berries would work? Do you leave that thick white outer layer on the brie?

      I think that frozen berries might be too wet, so I’m not sure they would work. And yes – leave the rind on the brie. It’s totally edible! 🙂
