Jersey Mikes Italian sub was the first copycat recipe we ever attempted. I didn’t know it at the time, however. There are so many great sub and hoagie shops along the Eastern shore and Jersey Mikes is one of them. Nothing compares to original subs from the Jersey shore. One of our favorite places to stop is the White House sub shop in Atlantic City.

The biggest problem we had in creating this copycat recipe was deciding whether to call it a sub or a hoagie. Sub it was.

We’ve been looking for a place that makes a great Italian sub. One thing that is crucial to us is the bread. It must be soft but have a great chew. The sub we ordered was the original Italian sub, and it was all that was promised. Nice selection of deli meats sliced thinly enough to layer just right.

This is what a Jersey sub is supposed to taste like. You can order the sub any way you like. With mayo, sure. But we ordered it Mike’s way. We are fans and soon headed back for the steak and cheese. The regular was fine for me, but next time I’m getting the giant.

Hearth Baked Rolls

Building a Jersey Mikes Italian sub requires the best of foundations to cradle the meats, cheeses and toppings. The bread is that foundation on which the sub relies. Look no further than Amoroso’s hearth-baked Italian rolls. Now, Jersey Mikes bakes their own rolls every day, but you can find great Italian hoagie rolls at many supermarkets and grocery stores.

One of the things that we really like about Amoroso’s sub rolls is that they are hearth baked. Hearth baking produces a roll that is slightly irregular. Each roll is unique when it comes out of the oven and has a wonderful aroma and texture from baking on the deck of the oven.

Most Italian cold cut subs are similar in that each sandwich may be slightly different, but all contain a variety of Italian meats and cheeses. Jersey Mikes Italian cold cut sub has: provolone, ham, prosciutto, capocollo, salami, and pepperoni. It took us a while to figure out that the ham on the sub is plain regular deli ham.

What Kind of Meat Does Jersey Mikes Use

In May 2019, Jersey Mikes announced that all the pork products would be antibiotic free and are distributed through the Clemons Food Group. The pork is fed a vegetarian diet and the pigs are raised on American family farms, distributed through Farm Promise.

We are so impressed with Jersey Mikes commitment to this program and the top quality of all the meats, breads, produce and cheeses served in the restaurant. Way to go guys!

Don’t use pizza pepperoni on your sub, instead, order deli sliced pepperoni from the counter associate at your grocery.

The meats and cheese should be sliced thin enough so that you can pile them in soft layers. I ask my deli man to dial number 2 on the slicer for thin sandwich slices.

For the cheese slices. Provolone. That’s it. Sliced thin as well, just like the meat slices.

Mikes Way means making a sandwich with onions, lettuce, tomatoes, spices, and a blend of olive oil and red wine vinegar that the restaurant calls “The Juice”. There is no magic to making this juice. But it is magical!

It is a simple recipe with good extra virgin olive oil and red wine vinegar. The recipe proportions are 3 parts olive oil to 2 parts vinegar. Just eyeball it or go ahead and make a little dressing ahead of time by whisking the olive oil, vinegar, oregano and salt in a bowl and setting aside.

The last time we were in Jersey Mikes the crew just splashes away. It’s kind of nice to see enthusiasm with the dressing bottles!

To get started making your Jersey Mikes Italian Cold Cut Sub at home, prepare by slicing lettuce, tomatoes and onions. The onion should be sliced thinly and then soaked in water to take a little of the bite away from the raw onion. Jersey Mikes use white onions in their sandwiches, but we chose a little milder red onion for our topping. Just one small variation on the original classic sub.

Slice the Italian rolls down the middle fully so that the two halfs are completely separate. This will make it easier to assemble the sandwich rather than trying to stuff all the ingredients into an envelope of a sub roll.

Begin to assemble the hoagie, by laying down the provolone first. The cheese acts as a barrier to the juice and will help keep the sandwich from getting soggy.

After the cheese is down, layer the meats carefully on top so that the sandwich is light and stuffed fully.

Make It Mikes Way

To make an original Italian sub Mikes Way, top the sandwich with shredded lettuce, sliced onions, tomatoes, and the Juice. Finally, lightly sprinkle the tomatoes with dried oregano and a finish of salt.

Cover the sub with the top bun and go ahead and slice the sub in half.

Prepare yourself to enjoy the best tasting sub you have ever had. But, make sure you invite your better half to share your sub, or you will be in the doghouse for a while! That’s a mistake I won’t make again.

Jersey Mikes Italian cold cut sub is a classic Italian hoagie in the Philadelphia style. Soft hearth baked Italian roll, Italian meats and cheeses topped with the juice.

Ingredients

  • 2 Italian Rolls
  • 4 ounces Provolone cheese
  • 4 ounces Ham domestic
  • 4 ounces Genoa salami
  • 4 ounces Capocollo ham
  • 4 ounces Prosciutto
  • 4 ounces Pepperoni deli sliced
  • 1 head Iceberg lettuce
  • 1 med Red onion
  • 1 large Tomato
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Red wine vinegar
  • 1 tsp Dried oregano
  • ½ tsp Kosher salt

Instructions

  • Slice the sub rolls in half.

  • Chop and shred the iceberg lettuce.

  • Slice the tomatoes.

  • Slice the onion thinly.

  • Layer the sub starting with the provolone cheese and then adding the rest of the meats. Spread all the meats and cheeses evenly across the sub base.

  • Top the meats with slices of onion, then lettuce and tomato

  • Pour or shake the olive oil, red wine vinegar on top of the condiments.

  • Dress the sub with pinches of oregano and salt

  • Top the sub with the remaining slice of roll. Cut in half and enjoy!
