I use a heavy wok pan or cast-iron skillet with around 3 inches of oil.

Of course, if you are lucky enough to own a deep fryer, use it to the manufacturer's suggestions.

Heat the oil to medium-high heat 375 degrees, fry, and use a metal strainer to remove them.

Blot them on paper towels to retrieve the oil.

The vegetables, meats or anything else you fry these in will stay crispy and very light in color.

Tips

This is a simple batter made to deep fry vegetables, fish, meats. Just cut them into cubes or small pieces, dip and fry, Terrific for parties, events, game day and snacks. A great little appetizer, I can make a whole meal out of! Delicious, light and crispy

ingredients:

  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon sea salt
  • 1 egg
  • 2/3 cup ice water
  • oil for frying
  • 1 pound cleaned shrimp, scallops, lobster chunks or bites size pieces of any white fish, calamari or any other fish you prefer
  • Or Use:
  • Cleaned cut and cubed Vegetables,
  • Other Meats: Chicken, Pork, Steak or any other meat you prefer
  • You can even use this batter to dip sandwiches like Monte Cristo and deep try

  1. Dipping suggestions below recipe:

  4. Making The Tempura Batter
  5. Whisk all dry ingredients together, set aside. Beat in another bowl the egg and ice water. Stir into the dry ingredients stir until mixed (will be lumpy)
  6. Heat the oil on medium-high heat. Dip fish into the batter and deep fry until lightly browned around 3 minutes on each side for fish, meats around 5 and to how you like each vegetable, fish or meat cooked to taste. .Place on paper towels to drain.
  7. Buffalo Hot Sauce for dipping:
  8. 1 cup hot sauce or wing sauce of choice
  9. 3 tablespoons melted butter
  10. 1/2 teaspoon garlic powder
  11. pinch of cayenne powder (optional)
  12. 1 tablespoon blue cheese or ranch dressing
  13. Mix together.
  14. Serve the fish with hot sauce on top and a side of blue cheese dressing for dipping. Or you can use any style dipping sauce you prefer.
  15. Blue Cheese Dressing:
  16. 3/4 cup sour cream
  17. 1/2 teaspoon dry mustard
  18. 1/2 teaspoon freshly cracked black pepper
  19. 1/2 teaspoon sea salt
  20. 1/2 teaspoon garlic powder
  21. 1 teaspoon Worcestershire Sauce
  22. 1 1/3 cups mayonnaise
  23. 6 ounces of crumbled blue cheese
  24. Beat everything together until smooth except blue cheese for around 2 minutes, fold cheese in at the end, best served after 24 hours refrigerated. Store unused up to one week.
  25. Asian Style Sweet and Sour
  26. 3/4 cups sugar
  27. 1/3 cup white vinegar
  28. 1/4 cup soy sauce
  29. 2 tablespoons ketchup
  30. 2 tablespoons cornstarch
  31. 2/3 cup water
  32. Place the water in a cup with cornstarch and mix. Add the rest into a saucepan and bring to a boil until thickened.
